FIESTA CHICKEN

Basically, cover a few chicken breasts with water - season to taste. Boil until they are tender.
While chicken is boiling, chop one red onion, a small jalapeno pepper (only use small amount if you are tender footed), slice 2 bunches of cilantro.
Put all veggies in a bowl.
When the chicken is cooked. Remove chicken to cool. Tear chunks from the chicken and put pieces in the bowl. Mix well. Use a teaspoon of olive oil, some lemon juice and chill.
Serve cold. You are getting protein and veggies. The pepper helps to jump start your metabolism.
