Chocolate Cream Cheese Cupcakes

by Dawn Ashford

One Devils Food box cake mix, made according to directions. (I either make 24 cup cakes or one 13 x 9 cake with the following filling)

8 oz pkg cream cheese, softened
1 egg
1/3 cup granulated sugar
1/8 teaspoon salt
dash vanilla
8 oz chocolate chips

In a small bowl beat together the sugar, egg and cream cheese, add vanilla and salt, stir well. Stir in chocloate chips.

If making a cake, place prepared cake mix in a pan, then put the cream cheese mixture on top by rounded spoon fulls, then take a knife and lightly draw thru the "scoops" of cream cheese to make a pretty pattern. The cream cheese filling sinks down into the cake, but not all the way so it's sort of marbled. If you're serving this for guests you can take a patterned paper doily and sprinkle a tiny bit of confectionary sugar thru it to make a pattern on top of the cake.

To make cupcakes it's recommended you always use cupcake papers, and divide the prepared
cake mix between 24 cupcakes, then put a spoonfull of the cream cheese mixture on top of each one, dividing it equally between the cupcakes. It sinks in, but not completely, so if you want a more attractive cupcake, you can take the time to put half the batter in the tins, add the cream cheese mixture, then the other half of the cake batter so that the cream cheese is totally hidden.

Bake according to pkg directions, but note that it will take about 5 minutes more for the cupcakes and maybe 8 - 10 more for the cake because of the filling, watch carefully to avoid over baking.
